Lamb with Onions and Tomato (Regan Josh)


  • 500 gms Diced lamb
  • 2 large onions (finely diced or grated)
  • 3-4 tablespoons Oil
  • 4-5 whole cloves
  • 6 whole cardamoms
  • 1 stick cinnamon
  • 3 bay leaves
  • 6-8 black peppercorns
  • 1 tablespoon grated ginger
  • 1 teaspoon crushed garlic
  • Chilli Powder according to taste
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 1 cup Diced tinned tomatoes
  • 1 teaspoon garam masala
  • Fresh coriander (optional)

Heat the oil in a saucepan; add the cloves, cardamom, cinnamon, bay leaves, peppercorns and onions. Stir well, cover and cook the onions over very low heat, stirring occasionally, until the onions are soft & golden.(10-15 mins) Stir in the grated ginger, garlic, chilli powder, turmeric and salt. Add he tomato paste and tomatoes and cook for 4-5 minutes (on high) Add the lamb and stir well till the meat is evenly coated and browned. Cover and cook the meat over low to medium heat for 30- 40 minutes. If the gravy is too thick add a little water.

Add the garam masala and chopped fresh coriander just before serving.
